Switch
Shifting ceilings and walls create a unique dining experience at Switch, a French-inspired steakhouse and seafood restaurant which is named for the physical transformation the restaurant experiences during each meal. Chef Marc Poidevin executes the French-inspired cuisine at Encore, the new signature resort in the Wynn collection.
To start, guests can begin with one of Switch’s hot or cold appetizers, such as Hawaiian style tuna “poke” with roasted beets; Marc’s lobster salad, with artichoke, avocado and asparagus in truffle vinaigrette; chestnut-celery croquette in a port reduction; sauteed foie gras with wild blueberry; and lobster-tomato bisque “pasta e fagioli.”
Full and half-size portions are offered for pasta and risotto with options including semolina gnocchi with coco beans, roasted tomato and braised short ribs; lobster risotto with rosemary and lobster coral; and roasted butternut squash ravioli with amaretti and al burro i Parmagiano. Guests can select several main dishes such as Poidevin’s signature braised rabbit fricassee with crispy spaetzle in riesling reduction; seared Arctic char with chorizo and cider braised cabbage in pinot noir reduction and veal chop Milanese with brown butter and fresh lemon.
Offerings from the grill include a selection of cuts such as the 10-oz filet, 12-oz New York strip and 24-oz porterhouse as well as fish options such as yellow fin tuna and Dover sole.
A assortment of desserts are available for the finale, including baby bananas foster with Haitian Rhum, macadamia nuts and Tahitian vanilla ice cream; Marc’s famous ice cream macaroon sandwich; and roasted red wine sickle pear with warm white chocolate bread pudding and black truffle ice cream.
